 Going to Canada for Visa Renewal

My visa will expire on July 28 . My college I-20 has my expected graduating date of May 2009.I am thinking about going to Canada to renew my F-1 visa so that I can go to Nepal in December. Can you guys suggest me on the following?
1. Documents that i need (apart from passport, I-20, transcript)
2.Do they ever deny visas ( i have never been out of status , have a GPA of 3.6, enrolled in a 4yr college)?
3. How long do I have to wait to get an appointment date?
 
I would really appreciate your help.
