There used to be quite a few Nepalese in San Antonio. I am not sure whether they are still there. There used to be one Dr. Rai in Southwest Medical Research Center. Give him a try, if you find him he is a very nice guy. All the best..

He is still in San Antonio. There are other Nepalese with surnames of Karki, Ghimire, Basu, Shrestha and Tamrakar. Sorry I can't give you their numbers as I have to ask them but you can certainly look them up in the White Pages.
